Visit Aspen/Snowmass


We visited Aspen/Snowmass over Memorial Day weekend.  This is not the peak time of year, as far as visitors, so it was nice that it was quiet and uncrowded.  Spring had just sprung in this area of the country and it was absolutely gorgeous!

We stayed in a condo in Snowmass Village. It was only a 15-20 minute drive from Snowmass to Aspen and we were able to get our condo for about $100 a night.  This is the down season in Snowmass, just after ski season ends and right before everything opens back up for summer.  But, it was nice and quiet.  Our condo had a heated pool and hot tub that we could use, so it worked out well for us.  We had a kitchen, so we brought breakfast, lunch and snacks with us to eat in the condo.

There were only a handful of restaurants open in Snowmass, but we did enjoy pizza at Tasters. We had dinner a couple of nights in Aspen.  We ate at Ryno's pizza and I had an amazing salad there.  It is a great pace for kids, because there is an arcade in the restaurant.  We stopped in and enjoyed a beer at the Aspen Brewing Company tap house. And, finally we had dinner at the Mexican restaurant, Mi Chola.  It was delish!

The town of Aspen was a lot smaller and laid back than what I had imagined it would be.  It is my new favorite mountain town.  I just loved the vibe.

The drive to Aspen on Owl Creek Road was so beautiful.  We saw several herds of Elk on the drive.  The drive up to Snowmass Village from HWY 82 is also amazing.  It is so pretty, it looks unreal.





HIKING

I really wanted to see the Maroon Bells while we were there, but in order to see it, we would have had to pay to take a shuttle bus up to it.  We opted not to do that and instead decided we were close enough to do the Crystal Mill hike.  Crystal Mill is one of the most beautiful, picturesque Colorado spots.

We got up early and drove to Marble, CO, which was about a 45 minute drive. It was a beautiful drive.  And, Marble is an interesting little town.  There were marble sculptures everywhere.

The actual hike is on a rocky road, which you also share with 4 wheel drive and off-road vehicles. So, if you have a Jeep or a RAZR, it would be really fun.  We drove part of the road before we parked our truck.  Koen and I were too scared to make it very far.  The road is really narrow and in some spots there are some steep drop offs.

There are no signs to find the road/trail. Once you make it through Marble, you could park at the bottom of the hill just before the "No Winter Maintenance" sign, or continue up the hill (most cars can make this part, but it is a very bumpy ride - you might want to make sure you have used the bathroom before starting the climb!).  At the top of the hill the road forks and this is where the only sign is.  It's just not explicit.  Left forks to lost mountain trail.  Right says the town of Crystal 4 miles. To the right there is a a place for 2 cars to park.  If you keep going to the right, even though it appears you are going nowhere, there is more parking.  The road/trail then takes a sharp left down a hill.

Driving:  Any capable 4 wheel drive verhicle you are willing to take off road would be fine. We saw a wide variety of vehicles, Jeeps, trucks and SUVs.  There were also several ATV's, RAZR's and dirt bikes. Even a few people on mountain bikes making the trek from Marble to Crested Butte.

Hiking:  most of the trail is flat, but there are some climbs and descents. On the way back, we thought it would be mostly downhill, but there were still quite a bit of climbs. You follow the river the whole time, so there is generally a nice breeze.  We had a decent amount of shade on the way out, but it was mostly sun on the hike back.  We brought small, washcloth sized towels and they were great to keep up cool.  We just got them wet in the river and put them around our necks - worked great.

The first site you see on the trail is Lizard Lake.  It was unreal how clear the water was. You could see the fish so easily.  There were quite a few people fishing here.

This time of year, there were pretty wild flowers along the trail.  Isn't this a great photo that Koen took!?

It is about a 4 mile hike to the mill and it is beautiful! If you keep walking past the mill for about another 5 minutes or so, you will reach the town of Crystal. 
Crystal is an old abandoned mine town  (ghost town) from the 1800s.  We were lucky enough to talk to a nice young woman who she and her boyfriend just bought out his family to take over the historic site and re-open the cabins and open a camping site in the town of Crystal.  They are also re-opening the old General Store.  We packed lunches and ate them in Crystal before heading back.  For the hike back, you just follow the same road down.  We started our hike around 9:30/10:00 AM and the trail was not too busy; however on the way back it was a lot busier.  We  had to pull off to the side a number of times to let the vehicles by.We definitely want to make it back to this part of the country this fall when the aspens are golden! Blueberry Lemon Chia Pancakes

Looking for a new breakfast item to prep over the weekend or serve for Mother's Day Brunch!  I have a favorite new breakfast pancake for regular macro days!  These Blueberry Lemon Chia pancakes are SOOO good and full of protein!

Ingredients
1 1/2 cups Kodiak Power Cakes mix
4 TBSP water
1 cup plan Greek yogurt
1/2 tsp vanilla 
4 whole eggs
2 TBSP chia seeds
1 lemon, zest of
blueberries (fresh or frozen)
coconut oil
maple syrup

Instructions

1.  Heat skillet to medium heat.
2.  In a large bowl, whisk Kodiak Cakes mix, water, 1 cup yogurt, eggs and vanilla together.  Once combined, stir in chia seeds and lemon zest.
3. Pour 1/2 cup mixture onto skillet.  sprinkle on your blueberries. When bubbles form on top, flip.  Repeat for the remaining batter.

I like to top with a dollup of greek yogurt and a small amount of maple syrup.  Enjoy!!

I mean, what more could we ask for in a miracle legging!?! <3  They have released these in new colors as well.  The are amazing!

Freezer Meal - Chicken Enchiladas



I love a good meal you can make once, but service twice.  This enchilada recipe is great frozen, so you can eat half and freeze the other half so you have a healthy freezer meal for busy weekends!

We have brought this recipe to multiple ski trips and is a favorite by all!

To eat one now and freeze one for later, use two square baking pans.

Ingredients:
12 Corn Tortillas
15 oz can Enchilada Sauce (I love the Hatch brand)
1 cup shredded cheddar cheese
2 organic bell peppers, chopped (or use frozen chopped)
2 onions, diced
2 cups frozen spinach
Rotisserie chicken or shredded chicken breast (approx. 2 cups)
2 cups salsa (I used Pace Picante Medium)
1 brick organic cream cheese 
2 15 oz cans black beans (drained and rinsed)

Instructions:

  • Preheat oven to 350.
  • In a large pan, saute the bell peppers, onion and spinach in olive oil.  
  • Add the shredded chicken, salsa, cream cheese and beans
  • Stir until blended, and cream cheese melts to create a creamy sauce
  • To assemble enchiladas, pour a little drizzle (about 1/4 cup) of enchilada sauce in the bottom of each baking dish.  The scoop filling into corn tortillas and roll them, placing them seam size down.  If they crack or unroll, that is okay, since it's all going to be smother in sauce and cheese.  You can also layer with the tortillas.
  • Once dish is full of enchiladas, pour remaining enchilada sauce over the top, sprinkle with cheese and bake for 30 minutes, or until warmed through.

You can freeze the second batch cooked or uncooked.  Package them in an oven-proof dish so  you can pop them in the oven frozen.  It will take about 1 hour to cook the enchiladas if you froze them uncooked and about 45 minutes to warm up if you cooked them before freezing.

High Protein Breakfast Idea - Mini Baked Egg Souffles



Finding healthy breakfast choices that my boys will eat is always a challenge.  They only like sugary cereals and it makes me cringe to watch them eat that for breakfast.  I came across a recipe recently and tweaked it a bit to make it more like an egg souffle.  And, it was a hit!! Yay!!   I can't wait to mix it up and to try other protein veggies combos.  I love the egg souffles at Panera, so I will have to take a look at their menu to get some new ideas!

Ingredients:
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large whole egg
  • 1 cup egg whites 
  • 3/4 cups Kodiak Power Cakes
  • 1 cup baby spinach or kale (finely chopped)
  • 1 red pepper (finely chopped)
  • 10 slices or bacon (or turkey bacon) cooked and chopped
  • 1 heaped tablespoon chives (finely chopped)
  • 1/3 cup fat free mozzarella cheese (shredded) or pepper jack cheese
Directions:
1. Preheat oven to 350 degrees and coat a muffin pan (12) with non-stick spray.
2. Combine Kodiak mix, seasonings, egg and egg whites in a large bowl. Mix until well combined and smooth.
3. Blend kale and red peppers in blender or food processor (or chop veggies very finely)
3. Divide bacon, veggies, chives, and cheese evenly in a muffin pan. Divide and pour egg/Kodiak mixture over veggies, bacon, and cheese filling each tin within 1/4″ from the top.
4. Bake 25 minutes until top is slightly golden brown.

Favorite Valentine's Day Dinner





Valentine's Day always holds a special place in my heart.  17 years ago, David proposed to me on Valentine's Day.  He made me dinner that night and it has turned into our traditional Valentine's Day dinner.  And, 17 years later (wow!!!), it is still one of our favorites.


Shrimp with Creamy Tomato-Basil Sauce

Ingredients:
2 Cups (8 oz) Penne Pasta
1 tsp olive oil
1 large onion (for 1 cup chopped)
1/2 cup fresh basil leaves, loosely packed
1 tsp bottled minced garlic
1 1/2 cups smooth marinara-style pasta sauce (we use spicy marinara)
1/3 cup heavy or whipping cream
1 lb peeled raw shrimp, fresh or frozen

Instructions:
1.  Place the penne in 2 1/2 quarts of boiling unsalted water and cook until tender, 11 to 13 minutes.
2.  Meanwhile, heat the oil in a 12-inch non-stick skillet over medium heat.  Peel and coarsely chop the onion, adding it to the skillet as you chop.  Raise the heat to medium-high and cook, stirring from time to time, until the onions are soft, about 3 minutes.
3.  While the onions cook rinse the basil, pat it dry with paper towels and remove the leaves from the stem.  Set aside.
4.  When the onions are soft, reduce the heat to medium.  Add the garlic, pasta sauce and cream to the skillet.  Reduce the heat to low and stir well.  If the shrimp are frozen, put them in a colander and run warm (not hot) water over them to defrost slightly, about 1 minute.  Add the shrimp to the skillet.  Simmer, stirring frequently to turn the shrimp, until the shrimp are pink, about 5 minutes.
5.  Meanwhile, coarsely chop the basil and set aside.  When the shrimp are done, remove the skillet from the heat.  Stir in the basil.
6.  Drain the penne and place a portion on each serving plate.  Top each serving with shrimp and sauce and serve it at once.

We really love it and if you make it, I hope you share it with someone you love!

Healthy Breakfast Meal Builder


Do you struggle coming up with healthy breakfast ideas?  Here are a few ideas of how to remix your morning mix!


STEP 1 - Beat the Eggs (1 RED 21 Day Fix)
  • 2 large eggs
  • 8 egg whites

STEP 2 - Pick your veggies (1/4 GREEN 21 Day Fix)
  • Spinach (1/4 cup)
  • Broccoli (1/4 cup, chopped)
  • Asparagus (1/4 cup)
  • Tomatoes (1/4 cup)
  • Peppers (1/4 cup, chopped)
  • Mushrooms (1/4 cup, sliced)
  • Onions (1/4 cup, chopped)

STEP 3 - Pick your meat  (1/2 RED 21 Day Fix)
  • Boneless, skinless chicken or turkey breast (1/2 cup diced, cooked)
  • Turkey slices, low sodium, fat free (3 slices)
  • Ham slices, low sodium, fat free (3 slices)
  • Turkey bacon (2 slices)

STEP 4 - Pick your topping (1 BLUE 21 Day Fix)
  • Avocado (1/4 medium)
  • Feta cheese (1/4 cup, crumbled)
  • Goat cheese (1/4 cup, crumbled)
  • Mozzarella (1/4 cup, shredded)
  • Cheddar, provolone or jack cheese (1/4 cup, shredded)
  • Parmesan (1/4 cup, shredded)

STEP 5 - Scramble it up!
  1. Heat 1 tsp oil in medium nonstick skillet over medium low heat
  2. Add veggies and meat; cook stirring frequently, for 2-4 minutes
  3. Add eggs, do not stir.  As eggs set, lift edges letting uncooked portion flow underneath; cook 3-4 minutes  or until heated through.
  4. Gently fold in half.

STEP 6 - Make it into a sandwich (1 YELLOW 21 Day Fix)
  • Bread, whole-grain, 1 slice
  • Pita bread, whole wheat,  1 small
  • English muffin, 1/2 muffin
  • Bagel, 1/2 small
  • Tortilla, 2 small (6-in)

What is a Fit Club?

I don't know about you, but I owned a gym membership for years and only used it a handful of times! When I think of all the money I wasted...  And, I wasn't getting any results.  Duh?!  I wasn't going, so I wasn't really doing anything.  And, when I did go, I had no idea what to do, so I would wander around, try a few machines and try not to look like an idiot! :)  I also work full-time and hated leaving my son at home or in the gym's nursery.  So, then  I tried several at home workout DVD's, but let's face it, it is hard to stay motivated when all you have is yourself to motivate you.  

It wasn't until I found a community of like minded women, the challenge groups, the programs, that I finally found a solution.  I was held accountable by the other women in the group, was motivated by seeing their daily check-ins and seeing their results.  No need to leave the house, my son could watch me (and, show me how he could do push-ups too), and the secret sauce happened --->>> CONSISTENCY!!   

Guess what??  Consistency = RESULTS!!

A Fit Club is a group of busy professional women and moms, all completing a program together in an exclusive online app and private Facebook Group.   We motivate each other, hold each other accountable, share recipes, share what is working and get help when it is not working.  If you don't have a group of like-minded friends, this is your new #fitfam!!

Maskcara Beauty Makeup Review

I have seen numerous makeup tutorials on Instagram and YouTube of women using this IIID makeup called Maskcara Beauty and I was curious to see if it would work for me.  

As we become older, our skin changes, we lose brightness and plumpness.  I liked the fact that this is unlike normal foundation that is just flat.  With this makeup you highlight and contour your whole face.

I am not going to lie, the first couple times I used it, I was a little scared.  Applying cream makeup is a little different than applying liquid foundation.  Once you use it a few times, it is much easier.  I ordered the 30 second HAC brush with it and it made application easy. 


I got my makeup right before I left on a work trip and was pleasantly surprised how it consolidated everything into one easy compact. My foundation, blush, contour and highlight were all in one compact.  You can even use the cream blush as your lip color!  You can use the contour color to define your eyes and even to line your lips!  I also love that the makeup is build-able, so you can use it lightly for everyday or use more for a more flawless look.

Ordering was super easy, I just sent a picture to an Artist with no makeup and with makeup and she figured out the perfect color.  You can find my artist, Harmony, here.

The compact and brushes are beautiful!
