High Protein Breakfast Idea - Mini Baked Egg Souffles



Finding healthy breakfast choices that my boys will eat is always a challenge.  They only like sugary cereals and it makes me cringe to watch them eat that for breakfast.  I came across a recipe recently and tweaked it a bit to make it more like an egg souffle.  And, it was a hit!! Yay!!   I can't wait to mix it up and to try other protein veggies combos.  I love the egg souffles at Panera, so I will have to take a look at their menu to get some new ideas!

Ingredients:
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large whole egg
  • 1 cup egg whites 
  • 3/4 cups Kodiak Power Cakes
  • 1 cup baby spinach or kale (finely chopped)
  • 1 red pepper (finely chopped)
  • 10 slices or bacon (or turkey bacon) cooked and chopped
  • 1 heaped tablespoon chives (finely chopped)
  • 1/3 cup fat free mozzarella cheese (shredded) or pepper jack cheese
Directions:
1. Preheat oven to 350 degrees and coat a muffin pan (12) with non-stick spray.
2. Combine Kodiak mix, seasonings, egg and egg whites in a large bowl. Mix until well combined and smooth.
3. Blend kale and red peppers in blender or food processor (or chop veggies very finely)
3. Divide bacon, veggies, chives, and cheese evenly in a muffin pan. Divide and pour egg/Kodiak mixture over veggies, bacon, and cheese filling each tin within 1/4″ from the top.
4. Bake 25 minutes until top is slightly golden brown.
