Peanut Butter Balls


I am always searching for healthy snack options.  These Peanut Butter Balls are the perfect snack to have on hand when that 3:00 sugar craving comes on.

Super easy to throw together to have on hand for the week.

Ingredients:
1/2 cup your favorite peanut butter (I love the one from Costco)
1/2 cup Kodiak Cakes Cinnamon Oat
3 tbsp maple syrup
1 tsp vanilla extract
Optional: chocolate chips, pinch of salt (if using unsalted PB) 

Instructions:
  • In a large bowl, mix together all of your ingredients until just combined. 
  • Roll your mixture into bites (I like to use a ice cream scooper)
  • Refrigerate for at least half an hour 
  • Pack in airtight container -  can be stored for up to two weeks (in fridge) or you can freeze as well.
